In Filipino cuisine, adobo refers to a common cooking process indigenous to the Philippines. When the Spanish first explored the Philippines in the late 16th century, they encountered a cooking process that involved stewing with vinegar. The Spanish referred to it as adobo due to its superficial similarity to the Spanish adobo.
Our 81 year old mother had discovered that using calamansi/lemon juice (has some similarity to vinegar) and oyster sauce (has some similarity to soy sauce) will give this recipe an even tastier flavor!
5 tbsps cooking oil
2 heads garlic
5 tbsps oyster sauce
2 lbs squid
1 c calamansi/lemon juice
